Up at the Stanley Hotel, the bar side of the Cascades Restaurant is where the whiskey and bourbon list lives. Flights are the way to work through it, and the old fashioned is the drink that comes up most. Food runs to bar plates: pork belly, spinach artichoke dip, deviled eggs, bacon-wrapped dates, a meat and cheese board, lobster bisque and chophouse chili. There is porch seating and a fire pit, the bartenders have a sense of humor, reservations are taken, and it stays open later on weekends.
